This is a quick and tasty spin on a traditional lettuce salad. It’s wildly refreshing and complements just about any entree.
(serves 4 to 6)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 seeded, peeled cucumber, chopped
10 baby carrots, diced
1 avocado, diced
½ to ¾ cup crumbled feta cheese
Seasoned rice wine vinegar
Combine salad ingredients in bowl. Drizzle with Extra Virgin Olive Oil and vinegar to taste and gently toss.
