No-Lettuce Salad Recipe

 

This is a quick and tasty spin on a traditional lettuce salad. It’s wildly refreshing and complements just about any entree.

(serves 4 to 6)

1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 seeded, peeled cucumber, chopped
10 baby carrots, diced
1 avocado, diced
½ to ¾ cup crumbled feta cheese
EVOO
Seasoned rice wine vinegar

Combine salad ingredients in bowl.  Drizzle with Extra Virgin Olive Oil and vinegar to taste and gently toss.

Cucumbers are made up of mostly water, which means eating them on hot summer days can yelp you stay hydrated–but there are plenty of reasons to eat this delicious food year round. Cucumbers are great sources of vitamin K and C and B vitamins, copper, potassium and manganese. Slice them up and eat them on their own or add them to your favorite salad or sandwich for some flavorful crunch.
